Picnic Shoulder
Description
The pork picnic shoulder is the half of the shoulder on the shank side. A parallel cut is made in the joint of the shank. The separation of the shoulder butt and the picnic shoulder is made approximately 2 cm from the spine of the pork neck bone. The shoulder riblet is trimmed and the jowl is cut at 2.5 muscles. The pork picnic shoulder is skinned, defatted to 3mm (1/8") and deboned. Lymph nodes are trimmed.
